Ingredients:

  • 4 ripe bananas, mashed
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 cups granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup coconut milk or sour cream
  • 1/2 cup nuts (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch (23×13 cm) loaf pan.
  2. In a medium bowl, Mash the bananas
  3. Add eggs and sugar and beat them.
  4. Add flour, baking soda, baking powder, salt and beat them until light and fluffy.
  5. Then add vanilla extract.
  6. Add the coconut milk, mixing until just combine and batter is smooth.
  7. If you’re using nuts, fold them in as well.
  8. Pour the batter into the prepared loaf pan and spread it evenly.
  9. Bake in the preheated oven for 60-70 minutes, or until a toothpick inserted into the center comes out clean. The baking time may vary, so start checking for doneness around 50 minutes.
  10. Allow the banana bread to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely before slicing.
