Pakistani style Courgette curry is delicious to eat. It has very soft and spicy texture with onion ginger taste. In Pakistan we called it Tori, but that is kind of bit slim shape. but I never seen before this kind of tori there. Here I noticed they look like cucumber. but when I start making them in pakistani style taste is the kind of similar. Now I love to eat both. After the research on it I find out that Tori have different kinds and different shapes.
In different region there is different name like Courgette, Sponge Gourd, Ridge Gourd, Snake Gourd, Zucchini, Turai, Kali Tori, Turaiya, Gilki, Chikni, Galka, Dodka, etc
But it was popularly known by the name(s) Courgette, Sponge Gourd, Ridge Gourd, in English.
It Belongs to the Cucumber Family and is a genus of tropical and subtropical Vines.
But I cook Tori(Sponge Ground and Courgette) both in same cooking style.
Let’s start the recipe!
Ingredients
- Courgette/Sponge Ground 1kg
- Onion small 2
- Tomatoes medium 2
- Ginger chopped 1tsp
- Cumin seeds 1 tsp
- Red chilli powder 1&1/2 tsp
- Black Paper 1/2tsp
- Turmeric 1/2tsp
- Salt to taste
- Coriander 1/2 bunch
- Oil 4tbs
Instruction
- Peel the courgette skin and cut into slices.
- Heat up oil, fry the cut onion until they turn to light golden brown.
- Add chopped ginger, fry it.
- Then add cut tomatoes and mix well.
- Add sliced Courgette in it and sauté every thing together.
- Add red chilli, salt, turmeric, cumin, black paper and mix properly.
- Cover it tightly and leave it on low flame for 20 minutes.
- After 20 minutes check, if there is some water that should be dry.
- Turn the flame on high, try to dry the water, when the oil comes up, its ready.
- Add the cut coriander.
- Served with the chapati.
