Zarda

Zarda is one of the most popular traditional South Indian desserts of Pakistan. its comes from Persia, and Urdu word Zarda that mean yellow its top listed of every menu in weddings or many occasions. its very easy to make as well. For zarda recipe we need boiled rice, with orange or yellow food colour milk sugar. other ingredients are additional the use for decoration.like raisins almonds pistachios and cardamons.

Recipe

  • 1/2 kg rice
  • 1/2 sugar
  • 1 cup milk
  • 2 tbs oil/ghee
  • 2 cardmons
  • 5 almonds
  • 2 tsp dry coconut
  • 1/4 tsp saffron
  • food colour orange/yellow

Instruction

  • Take a large pot heat up 2 tbs ghee/oil and roast almonds and until golden brown and keep aside.
  • In remaining ghee add pods cardamons until it give little colour change.
  • Add 1 cup of water, 1/4 tsp saffron and 1/4 tsp food colour .
  • Mixx well, add 1 cup of soaked basmati rice and mix well.
  • cook and cover on medium flam for few minutes .
  • Make sure rice rice half cooked .
  • further add 1 cup of sugar 2 tbsp ghee and roasted almonds.
  • Mix gently make sure sugar get melt, cover and simmer for few minutes.
  • cook until get rice properly cook .make sur don’t over cook other wise rice gets mash.
  • garnish with crushed dry fruits .
