Street-Style Pav Bhaji Recipe

Ingredients:

  • 4 large potatoes, boiled and mashed

Instructions:

  1. Prepare the Bhaji:
    • Heat 2 tablespoons of butter in a pan. Add chopped onions and sauté until translucent.
    • Add minced garlic, grated ginger, and green chilies. Cook for a minute.
    • Toss in the chopped tomatoes and cook until they soften.
    • Add Pav Bhaji masala, red chili powder, turmeric powder, and salt. Mix well.
    • Add the mashed potatoes and boiled mixed vegetables. Mix thoroughly until well combined. Let it simmer for 10-15 minutes on low heat. Add a little water if needed to adjust the consistency.
  2. Toast the Pav:
    • Slit the Pav (dinner rolls) horizontally without cutting them all the way through.
    • Heat a griddle or skillet and add a little butter. Place the Pav on the griddle, open-side down, and toast until they turn light golden brown.
  3. Serve:
    • Serve the hot and spicy Pav Bhaji with a dollop of butter on top.
    • Garnish with freshly chopped coriander leaves and a squeeze of lemon juice.
    • Accompany with the toasted Pav on the side.
